The Wing Rubric

Wings deserve more than just a quick thumbs up or down. At The Wing Standard, we judge with structure, fairness, and a little sauce-stained passion.

Our scoring system is simple: each category earns points that add up to a total score out of 30. A perfect 30 is legendary — the kind of wing that makes you drop everything and order another round. An 18 means you’ve officially met The Wing Standard. Anything below… well, let’s just say we’ll be honest.

Here’s how our scale works:

The Wing Standard – Judging Rubric

Structure (10 pts)

The foundation — how the wing is built, cooked, and presented.

1. Appearance (0–3 pts)

  • Wings should look appetizing: golden, evenly coated, intentional plating.

  • Deduction for pale, sloppy, or black tips (sign of previously frozen wings).

 

2. Texture & Cook (0–3 pts)

  • Crisp skin (as intended), juicy meat, fully cooked.

  • Deduction for soggy, dry, or undercooked.

  • Smoked or grilled-only wings cannot meet the Standard; fried is the required base. Smoke/grill as a finish = acceptable.

 

3. Consistency Across Batch (0–3 pts)

  • All wings should meet the same level of execution.

  • No “lottery wings” — one raw, one dry, one perfect.

  • Jumbo, water-pumped wings score low — swollen, flavorless fluff earns shame.

 

4. Accompagnement Check (0–1 pt)

  • Carrots and/or celery should be fresh, crisp, and cleanly cut.

  • Missing, limp, or tired veggies = 0 points.

Sauce (10 pts)

The flavor delivery system — whether wet or dry rub.

1. Coverage & Integration (0–3 pts)

  • Sauce or rub should coat evenly, flavor in every bite.

  • Deduction for clumpy rub, puddled sauce, or naked wings.

 

2. Balance & Depth (0–3 pts)

  • Sauce/rub should deliver layered flavor: sweet, tang, savory, or heat in harmony.

  • Overpowering or flat = deduction.

 

3. Execution of Style (0–3 pts)

  • Classic Buffalo nailed, or creative flavors executed with purpose.

  • Poorly done classics or gimmicky experiments lose points.

 

4. Dip Check (0–1 pt)

  • Blue cheese or ranch should be fresh, flavorful, clearly paired to complement the wing.

  • Watery, flavorless, or missing dip = 0 points.

 

 

Spice (10 pts)

The soul of flavor — boldness, personality, and crave-factor.

1. Flavor Impact (0–3 pts)

  • Flavor should be memorable and crave-worthy.

  • Deduction for bland or forgettable wings.

 

2. Heat With Purpose (0–3 pts)

  • Heat should enhance flavor (whether mild or fiery).

  • Heat dumped on for shock value = deduction.

 

3. Signature Edge (0–3 pts)

  • Wing should carry a distinct personality, a “fingerprint” that sets it apart.

  • Generic or copycat wings lose identity.

 

4. Spice Balance Check (0–1 pt)

  • Heat level should feel intentional: never timid, never punishing.

  • Deduction if wings are bland/mild to a fault or capsicum-concentrate hot.

Total Possible Score: 30 points

Score Philosophy

0–10 (Basic)They served wings. End of story.

11–17 (Solid)Good wings, worth eating, but not setting the bar.

18–24 (Masterpiece Zone)Exceptional wings — crave-worthy, The Standard.

25–29 (Elite)Rare, benchmark-setting wings that define what’s possible.

30 (Mythic) Flawless. From wing integrity to spice balance — legendary.
